Super Easy 5 Minute Vegetarian Roasted Red Pepper Enchiladas

I use the nonstick mats pictured above and everything always comes off the pan so easily!

This is a recipe you can put together in 5 minutes if you roast the peppers ahead of time! My whole family loved it and we can’t wait to make it again.

Ingredients
Green enchilada sauce
Taco shells
Queso fresco cheese, crumbled
Red pepper, green pepper, onions

Instructions
Roast veggies night before at 400 degrees for about 30 minutes.
Spray bottom of small casserole dish.
Layer sauce, taco shells, peppers, cheese until you run out of sauce.
Bake at 350 for about 30 minutes.
Serve with chips, sliced tomatoes, and avocado. Enjoy!
