Chicken in a Bucket
This is one of the easiest recipes I know how to make. Aunt Mary made this for us approximately 8 years ago, and I have been making it ever since. When she told us she was making Chicken in a Bucket, I thought, wow, this will be interesting! I pictured a bucket of Kentucky Fried Chicken so I was surprised when it turned out to be a chicken and rice casserole…. Enjoy the recipe!
Ingredients
1 pkg Good Seasonings Italian Dressing
4 chicken breasts
2 c. Instant Minute Rice
2 cups chicken broth
1 bag frozen veggies
1 lg can onion rings (I used to always buy French’s which is what you see in the photos above, but last time I bought these and they were good too.)
Instructions
- Prepare packet of dressing according to instructions on packet. (I usually use half the amount of oil and replace the other half with more water.)
- Cube chicken and place in bottom of 13×9 pan.
- Pour 1/2 of dressing over chicken and marinate – you can marinate for 1 minute or for 5 hours, depending on how much time you have.
- Bake at 350 for 20 minutes.
- Take dish out of oven and add the rest of the ingredients to the pan.
- Return to oven for 25 more minutes.
