Chicken in a Bucket

This is one of the easiest recipes I know how to make. Aunt Mary made this for us approximately 8 years ago, and I have been making it ever since. When she told us she was making Chicken in a Bucket, I thought, wow, this will be interesting! I pictured a bucket of Kentucky Fried Chicken so I was surprised when it turned out to be a chicken and rice casserole…. Enjoy the recipe!

Ingredients
1 pkg Good Seasonings Italian Dressing
4 chicken breasts
2 c. Instant Minute Rice
2 cups chicken broth
1 bag frozen veggies
1 lg can onion rings (I used to always buy French’s which is what you see in the photos above, but last time I bought these and they were good too.)

Instructions

  1. Prepare packet of dressing according to instructions on packet. (I usually use half the amount of oil and replace the other half with more water.)
  2. Cube chicken and place in bottom of 13×9 pan.
  3. Pour 1/2 of dressing over chicken and marinate – you can marinate for 1 minute or for 5 hours, depending on how much time you have.
  4. Bake at 350 for 20 minutes.
  5. Take dish out of oven and add the rest of the ingredients to the pan.
  6. Return to oven for 25 more minutes.
